Ingredients
  

  • 1.5 lbs (680g) marble potatoes – halved if large, left whole if small
  • 2 tbsp (30ml) olive oil – use extra virgin for best flavor
  • 4 Garlic cloves, minced – or 1 tsp garlic powder for a milder touch
  • 1 tbsp (3g) fresh rosemary, chopped – substitute with thyme or Italian seasoning
  • Salt to taste – about 1 tsp (5g)
  • Black pepper to taste – about ½ tsp (2g)
  • Fresh parsley, chopped, for garnish (optional)

Instructions
 

  • Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Prepare the potatoes: Wash and dry the marble potatoes. Cut any large ones in half to ensure even cooking
  • Season: In a large bowl, toss the potatoes with olive oil, minced garlic, rosemary, salt, and black pepper until well-coated.
  • Spread on baking sheet: Arrange the potatoes cut-side down in a single layer on the prepared sheet
  • Roast for 20–25 minutes or until golden and crispy on the outside, and tender inside.
  • Optional: Garnish with chopped parsley before serving for a fresh finish.

Notes

  • You can swap rosemary with thyme, sage, or your favorite seasoning blend.
  • Want more crisp? Broil for the last 2 minutes—but watch closely!
  • These store well: refrigerate in an airtight container for up to 4 days.
  • Reheat in the oven or air fryer for best texture.
