- 1 packet taco seasoning (about 1 oz / 28g) use low-sodium for a healthier version
- 4 cups (480g) diced potatoes Yukon Gold or Russet work best
- 1 cup (120g) shredded cheddar cheese or use a Mexican blend
- ½ cup (120ml) sour cream Greek yogurt works as a healthier option
- ½ cup (75g) chopped onions
- 1 tbsp olive oil (15ml) for sautéing the beef and onions
- Salt & pepper to taste
- Fresh cilantro (optional, for garnish)
- ½ cup (120g) canned corn (optional)
- ½ cup (90g) black beans, drained and rinsed (optional)
Preheat oven to 375°F (190°C). Grease a medium baking dish and set aside.
Cook the potatoes: Boil diced potatoes in salted water for 5–7 minutes until just tender. Drain and set aside.
Prepare the filling:Heat olive oil in a large skillet over medium heat.Add chopped onions and cook until softened, about 2 minutes.Add ground beef, breaking it apart with a spoon. Cook until browned.Stir in taco seasoning and a splash of water (2–3 tbsp). Let simmer 2–3 minutes. Assemble the casserole:In the baking dish, layer cooked potatoes, taco meat, and half the cheese.Spoon sour cream across the top, then sprinkle the remaining cheese. Bake for 15 minutes or until cheese is bubbly and golden.
Garnish and serve: Top with fresh cilantro and any optional toppings like salsa or diced avocado.
