Ingredients
  

  • 6 large flour tortillas (10-inch) / 6 large flour tortillas (approx. 250g) Note: You can substitute with whole wheat or gluten-free tortillas.
  • 6 large eggs / 6 large eggs (300g) Tip: Use pasture-raised eggs for richer flavor.
  • 1 cup whole milk / 240ml whole milk For a dairy-free version, use unsweetened almond or oat milk.
  • 1 cup shredded cheddar cheese / 120g cheddar cheese Try a blend of mozzarella or pepper jack for extra flavor!
  • ½ cup diced bell peppers / 75g diced bell peppers
  • ½ cup chopped spinach / 30g chopped spinach
  • ½ cup chopped onion / 40g chopped onion
  • 1 tsp garlic powder / 3g garlic powder
  • ½ tsp salt / 3g salt
  • ¼ tsp black pepper / 1g black pepper
  • ¼ cup cooked bacon bits or diced ham / 40g

Instructions
 

  • Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish or quiche pan.
  • Layer tortillas: Line the pie dish with tortillas, overlapping them to cover the bottom and sides. Trim if necessary.
  • Prepare the filling:In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until fully combined.
    Stir in chopped onions, bell peppers, spinach, and half of the shredded cheese.
  • Assemble: Pour the egg mixture into the tortilla base. Sprinkle the remaining cheese evenly over the top. Add optional cooked bacon bits or ham if desired.
  • Bake: Place in the preheated oven and bake for 25 minutes or until the center is set and the top is golden.
  • Cool & Serve: Allow to cool slightly before slicing. Serve warm with your favorite side salad or salsa!
